Preparing the Calamari

    Clean the Calamari

    Rinse the calamari under cold water. Remove the head and innards, and peel off the outer skin if necessary. Cut the body into rings about 1/2 inch wide.

    Marinate in Buttermilk

    Place the calamari rings in a bowl and pour in the buttermilk. Let it marinate for at least 30 minutes in the refrigerator to tenderize the squid.

    Prepare the Coating

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Frying the Calamari

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and let any excess drip off. Dredge the rings in the flour mixture, ensuring they are well coated.

    Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
