Prepare the Jalapeños
Wash the jalapeños under cold water. Cut them in half lengthwise and remove the seeds and membranes using a spoon or a paring knife. This will help reduce some of the heat.

Make the Filling
In a mixing bowl, combine the cream cheese, cheddar cheese, garlic powder, onion powder, salt, black pepper, and crumbled bacon. Mix until well combined and smooth.

Stuff the Jalapeños
Using a spoon or a small spatula, fill each jalapeño half with the cheese mixture, packing it in generously.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot but not smoking. You can test the oil by dropping in a small piece of bread; it should sizzle immediately.

Fry the Jalapeños
Carefully place the breaded jalapeños in the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fried jalapeños from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
