Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt chocolate and butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring until smooth and fully melted. Allow to cool slightly.

Mixing Ingredients

  1. 3

    Combine eggs and sugar

In a mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is light and frothy.

  2. 4

    Add melted chocolate

Pour the melted chocolate and butter mixture into the egg mixture and stir gently until well combined.

  3. 5

    Incorporate dry ingredients

Sift the all-purpose flour and salt into the mixture. Fold gently until just combined, being careful not to overmix.

Baking

  1. 6

    Fill ramekins

Divide the batter evenly among the prepared ramekins.

  2. 7

    Bake the cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should be soft.

  3. 8

    Cool briefly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

Serving

  1. 9

    Serve

Run a knife around the edges of each cake to loosen, then invert onto plates. Serve warm with a scoop of vanilla ice cream on top.
