Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until all crumbs are moistened.

    Form Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake Crust

    Bake the crust in the preheated oven for about 10 minutes, until lightly golden. Remove from oven and let it cool while preparing the filling.

Cheesecake Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

    Incorporate Vanilla and Eggs

    Add vanilla extract and mix. Then, add eggs one at a time, mixing on low speed after each addition until just blended.

    Add Flour

    Sift in the all-purpose flour and mix until smooth, but do not over-mix.

    Pour Filling into Crust

    Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

Baking and Cooling

    Bake Cheesecake

    Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.

    Cool the Cheesecake

    Turn off the oven and crack the oven door, allowing the cheesecake to cool slowly for about 1 hour.

    Remove the cheesecake from the oven, cover with plastic wrap, and refrigerate for at least 4 hours or overnight before serving.

Topping (Optional)

    If using, wash and slice fresh strawberries or berries.

    In a small bowl, mix the berries with powdered sugar and let sit for 10 minutes. This will create a syrup.
