    Prepare the Ingredients

    Slice the pepperoni and boudin sausage into bite-sized pieces. Grate or slice the pepper jack cheese as desired.

    Chop the Vegetables

    Slice the bell pepper and onion into thin strips and mince the garlic.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper, onion, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Add the Sausages

    Add the sliced pepperoni and boudin sausage to the skillet. Cook for an additional 5-7 minutes, stirring occasionally until the sausage is heated through and slightly browned.

    Season the Mixture

    Season with black pepper and salt to taste. Mix well to combine all the flavors.

    Add the Cheese

    Sprinkle the grated or sliced pepper jack cheese over the top of the sausage and vegetable mixture. Cover the skillet and allow the cheese to melt for about 2-3 minutes.

    Once the cheese is melted, remove the skillet from heat. Garnish with chopped fresh parsley and serve warm.
