Method

Cooking Pasta

    Boil Water

    Fill a large pot with water and add 1 tablespoon of salt. Bring to a rolling boil over high heat.

    Cook Pasta

    Add 500 grams of your chosen pasta to the boiling water. Cook according to package instructions, usually around 8-12 minutes, until al dente.

    Drain Pasta

    Once cooked, reserve a cup of pasta water and then drain the pasta in a colander. Drizzle with 2 tablespoons of olive oil to prevent sticking.

Preparing Sauce

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 4 minced garlic cloves to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn.

    Add Tomatoes and Seasonings

    Pour in 400 grams of canned diced tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir to combine.

    Simmer Sauce

    Reduce heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld.

    Add Fresh Basil

    Just before serving, stir in 1 cup of chopped fresh basil into the sauce.

Combining Pasta and Sauce

    Combine

    Add the drained pasta to the skillet with the sauce. Toss well to combine, adding reserved pasta water if needed to loosen the sauce.

    Serve

    Divide the pasta into serving bowls and top with grated Parmesan cheese and red pepper flakes if desired.
