Chocolate Dipped Strawberries
1. Prepare the Strawberries
Rinse the strawberries under cold water and dry them thoroughly with paper towels.
2. Melt the Chocolate
In a microwave-safe bowl, combine semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
3. Dip the Strawberries
Hold each strawberry by the stem and dip it into the melted chocolate. Allow excess chocolate to drip off.
4. Set the Strawberries
Place the dipped strawberries on a baking sheet lined with parchment paper. Repeat with all strawberries.
5. Drizzle White Chocolate
Melt the white chocolate chips in the same manner, then use a fork to drizzle over the dipped strawberries for decoration.
6. Chill
Refrigerate the strawberries for at least 30 minutes to set the chocolate.

7. Preheat the Oven
Preheat your oven to 325°F (160°C).
8. Prepare the Crust
In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of mini cheesecake molds.
9. Make the Cheesecake Filling
In a mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, then mix in the vanilla extract and eggs until well combined.
10. Fill the Molds
Pour the cheesecake filling over the prepared crusts in the molds, filling them to about 3/4 full.
11. Bake
Bake in the preheated oven for 20-25 minutes, or until the edges are set and the center is slightly jiggly.
12. Cool and Chill
Remove from the oven and allow to cool. Refrigerate for at least 2 hours before serving.
Fruit Tart
13. Prepare the Tart Shell
Place the pre-made tart shell on a serving platter.
14. Fill with Pastry Cream
Spoon the pastry cream into the tart shell and spread it evenly to the edges.
15. Top with Fresh Fruit
Arrange the mixed fresh fruit on top of the pastry cream in a decorative pattern.
16. Glaze the Tart
Heat the apricot glaze in a small saucepan until warm, then brush it over the fruit to give it a shiny finish.
17. Chill
Refrigerate the tart for at least 30 minutes before serving.
