Method

Crust Preparation

  1. 1

    Make the Tart Crust

In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt. Add the chilled and cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Add the ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Do not overmix. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  3. 3

    Roll and Bake the Crust

Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer to a 9-inch tart pan and press into the edges. Prick the bottom with a fork and line with parchment paper. Fill with pie weights or dried beans.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 20-25 minutes or until golden brown. Remove from the oven, let cool, and then remove the weights and parchment paper.

Filling Preparation

  1. 5

    Prepare the Gelatin

In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5 minutes to bloom.

  2. 6

    Whip the Cream

In a large mixing bowl, beat the heavy cream with an electric mixer until it starts to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

  3. 7

    Incorporate Gelatin

Gently heat the bloomed gelatin in the microwave for about 10-15 seconds until it is melted. Carefully fold the melted gelatin into the whipped cream mixture until well combined.

  4. 8

    Fill the Tart

Spoon the whipped cream filling into the cooled tart crust, smoothing the top with a spatula. Refrigerate for at least 2 hours to set.

Assembly and Serving

  1. 9

    Add Toppings

Once the filling is set, remove the tart from the refrigerator. Top with fresh mixed berries, arranging them as desired. Garnish with mint leaves.

  2. 10

    Serve

Slice the tart into wedges and serve chilled. Enjoy your delicious Large Chantilly Tart!
