Preparation

    Prepare the Deggy

    Preheat the oven to 375°F (190°C). Place the whole Deggy on a roasting pan and rub with olive oil, salt, and black pepper. Set aside.

    Prepare the Boudin

    Remove the casing from the boudin sausage. Crumble it into a bowl and set aside.

    Prepare the Jalapeños

    Finely chop the jalapeño peppers. If you prefer less heat, remove the seeds before chopping.

    Prepare the Cheese

    Grate the pepper jack cheese and set aside.

Assembly

    Stuff the Deggy

    In a mixing bowl, combine the crumbled boudin, chopped jalapeños, and grated pepper jack cheese. Mix well to combine the flavors.

    Fill the Deggy

    Carefully stuff the mixture into the cavity of the whole Deggy. Ensure it is packed tightly.

Cooking

    Roast the Deggy

    Place the stuffed Deggy in the preheated oven. Roast for about 1 hour or until the internal temperature reaches 165°F (74°C). Baste occasionally with pan juices.

    Serve

    Once cooked, remove the Deggy from the oven and let it rest for 10 minutes before slicing. Serve warm.
