Method
Preparation of Pulled Pork
- 1
Cook the Pulled Pork
If you don't have pre-cooked pulled pork, cook a pork shoulder in a slow cooker with your favorite spices and some liquid (like broth or soda) on low for 8 hours or until tender. Shred the pork with two forks and set aside.
- 2
Mix with BBQ Sauce
In a large bowl, combine the pulled pork with 1 cup of BBQ sauce. Mix until the pork is well-coated and the sauce is evenly distributed.
Preparation of Pineapple and Jalapeno
- 3
Prepare the Pineapple
If using fresh pineapple, peel, core, and dice it into small chunks. If using canned, drain and dice. Set aside.
- 4
Prepare the Jalapeno
Wearing gloves, remove the seeds from the jalapeno if you prefer less heat. Dice the jalapeno into small pieces.
Assembly
- 5
Combine Ingredients
In a mixing bowl, add the BBQ pulled pork, diced pineapple, and diced jalapeno. Stir gently to combine all ingredients evenly.
- 6
Prepare Buns
Lightly toast the buns on a grill or in a toaster until golden brown.
- 7
Assemble Sliders
On each bun, place a generous scoop of the pulled pork mixture. Top with coleslaw, a sprinkle of chopped cilantro, and a squeeze of lime juice for freshness.
