Preparation of Balsamic Glaze

    Make the Balsamic Glaze

    In a saucepan over medium heat, combine 1 cup of balsamic vinegar and 2 tablespoons of brown sugar. Stir until the sugar dissolves. Bring to a simmer and reduce the heat to low. Allow the mixture to simmer for 15-20 minutes, or until it thickens to a syrupy consistency. Remove from heat and let it cool.

Preparation of Candied Bacon

    Candy the Bacon

    Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Place 8 slices of bacon on the baking sheet. Sprinkle 1 cup of brown sugar evenly over the bacon. Bake for 20-25 minutes or until crispy and caramelized. Remove from the oven and let cool on a wire rack.

Assembly of the Salad

    Assemble the Couchon Doux

    In a large serving bowl, add 4 cups of fresh arugula. Tear the fresh mozzarella into bite-sized pieces and distribute evenly over the arugula. Add the candied bacon, breaking it into smaller pieces, and add the prosciutto slices on top. Drizzle the balsamic glaze over the salad just before serving.
