Preparation

    Prepare the Milk

    In a large pot, pour 1 gallon of milk and heat it gently over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Cultured Buttermilk

    Once the milk has reached the desired temperature, remove it from heat and stir in 1 cup of cultured buttermilk. Let it sit for about 10 minutes to allow it to thicken.

    Add Rennet

    Dissolve 1 tsp of rennet in 1/4 cup of cool, non-chlorinated water. Stir this mixture into the milk gently for about 30 seconds.

    Let the Curd Set

    Cover the pot with a lid and let it sit undisturbed for 5 to 10 minutes until a gel-like curd forms.

Curd Processing

    Cut the Curd

    Using a long knife, cut the curd into 1-inch cubes. Let it sit for another 5 minutes.

    Cook the Curd

    Gently heat the curds to 105°F (40°C), stirring occasionally. This should take about 30 minutes.

    Drain the Curds

    Once cooked, use a slotted spoon to transfer the curds to a colander lined with cheesecloth. Allow the whey to drain for about 30 minutes.

Finishing Touches

    Add Salt

    After draining, transfer the curds to a bowl and mix in 1 tbs of salt. If desired, you can also add herbs or spices at this point.

    Mold the Cheese

    Pack the curds into a cheese mold or a small container to shape the cheese. Press down gently to remove any remaining whey.

    Refrigerate

    Cover the mold or container and refrigerate for at least 24 hours before serving.
