Prepare the Ancho Chile Butter
In a small bowl, mix the softened butter with ancho chile powder, minced garlic, salt, and black pepper until well combined. Set aside.

Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt and black pepper. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the diced tomatoes and chopped spinach. Sauté for about 5 minutes until the tomatoes are softened and the spinach is wilted.
