Prepare the Mignonette
In a small bowl, combine the red wine vinegar, finely chopped shallots, fresh parsley, and freshly ground black pepper. Mix well and set aside to allow flavors to meld.

Shuck the Oysters
Using an oyster knife, carefully shuck the fresh oysters, making sure to keep the liquor (the seawater inside) in the shell. Discard the top shell.

Arrange on Ice
Place the shucked oysters on a platter over crushed ice to keep them chilled.

Serve with Accompaniments
Serve the oysters with cocktail sauce, prepared horseradish, and house mignonette on the side. Enjoy immediately.
