    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrot. Sauté until the vegetables are soft, about 5-7 minutes. Stir in the minced garlic and cook for another minute.

    Make the Roux

    Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for 2-3 minutes to create a roux, stirring constantly.

    Add Stock

    Slowly add the chicken or seafood stock while stirring to avoid lumps. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.

    Add Crab and Seasoning

    Stir in the fresh crab meat, heavy cream, sherry, Old Bay seasoning, salt, and black pepper. Simmer for another 5-10 minutes until heated through and flavors meld.

    Blend for Smoothness (Optional)

    For a smoother texture, use an immersion blender to blend the bisque to your desired consistency.
