    Prepare the Maple Glaze

    In a saucepan over medium heat, combine maple syrup, bourbon, soy sauce, and mustard. Bring to a simmer and cook for about 5 minutes until slightly thickened. Set aside.

    Prepare the Plank

    Soak the maple wood plank in water for at least 1 hour before grilling.

    Prepare the Potatoes and Asparagus

    Toss the diced potatoes and chopped asparagus with olive oil, fresh herbs, salt, and pepper in a bowl.

    Roast the Potatoes and Asparagus

    Spread the potato and asparagus mixture on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until tender and golden.

    Cook the Salmon

    Preheat the grill. Place the soaked maple plank on the grill and heat for 5 minutes. Place the salmon fillets on the plank and brush with the maple glaze. Close the grill lid and cook for about 12-15 minutes, or until the salmon is cooked through.

    Serve

    Serve the roasted salmon on a plate with the herb-roasted potato and asparagus hash alongside.
