Preparation and Cooking

    Prepare the Herb-Roasted Potato & Asparagus Hash

    Preheat the oven to 400°F (200°C). In a large bowl, toss the diced potatoes with olive oil, salt, pepper, and fresh herbs. Spread the potatoes on a baking sheet and roast in the oven for about 20 minutes.

    Add Asparagus

    After 20 minutes, add the asparagus to the baking sheet with the potatoes. Toss to combine and roast for another 10-15 minutes, or until the potatoes are golden and tender and asparagus is cooked.

    Prepare the Ahi Tuna

    While the vegetables are roasting, rub the Ahi tuna steaks with olive oil and coat them with Char Crust seasoning on both sides.

    Sear the Tuna

    Heat a skillet over medium-high heat. Once hot, add the seasoned tuna steaks. Sear for about 1-2 minutes on each side for rare, or longer for more doneness, depending on your preference.

    Serve

    Plate the roasted potato and asparagus hash, top with the seared Ahi tuna, and drizzle with Foyot sauce before serving.
