Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test if the oil is ready by dropping in a small piece of potato; it should sizzle immediately.

Fry the Potatoes
Carefully add the potato slices to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.

Make the Blue Cheese Sauce
In a mixing bowl, combine blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy, adjusting seasoning to taste.
