Prepare the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Blacken the Chicken
Rub the chicken breasts with olive oil, blackening seasoning, salt, and pepper. Heat a skillet over medium-high heat and cook the chicken for about 5-7 minutes on each side, or until cooked through and nicely blackened. Remove from skillet and let rest before slicing.

Sauté the Vegetables
In the same skillet, add the leeks and snow peas. Sauté for about 3-4 minutes until tender, then add the roasted red pepper cream and red pepper pesto. Stir to combine and heat through.

Combine and Serve
Add the cooked penne pasta to the skillet, tossing to coat in the sauce. Serve the pasta topped with sliced blackened chicken, smoked gouda, and chopped cilantro.
