    Prepare the Berries

    Wash and dry all the berries. Slice the strawberries if they are large. Arrange the berries in a serving dish.

    Make the Crème Anglaise

    In a saucepan, combine the heavy cream, milk, and half of the sugar. If using a vanilla bean, split it and scrape the seeds into the mixture. Heat over medium heat until just simmering, then remove from heat.

    Temper the Egg Yolks

    In a bowl, whisk together the egg yolks and remaining sugar until light in color. Slowly add a small amount of the hot cream mixture to the yolks, whisking constantly to prevent curdling. Gradually add the yolk mixture back to the saucepan.

    Thicken the Sauce

    Return the saucepan to low heat, stirring gently, until the mixture thickens enough to coat the back of a spoon. Do not let it boil.

    Strain and Cool

    Strain the sauce through a fine-mesh sieve into a bowl to remove any curdled bits. Allow it to cool before serving.

    Serve

    Pour the cooled crème anglaise over the arranged berries and enjoy!
