    Make the Dough

    In a large bowl, combine flour and granulated sugar. Cut in butter until mixture resembles coarse crumbs. Stir in water until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a large bowl, combine sliced apples, brown sugar, cinnamon, and vanilla extract. Toss until apples are well coated.

    Assemble the Croustade

    Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface and cut into circles. Place a spoonful of apple filling in the center of each circle, fold over and seal the edges with a fork. Brush tops with beaten egg.

    Bake

    Place the turnovers on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

    Prepare the Boozy Maple Syrup

    In a small saucepan, heat maple syrup over medium heat. Stir in bourbon (if using) and simmer for 2-3 minutes. Remove from heat.

    Serve

    Serve warm croustades drizzled with boozy maple syrup and a scoop of cinnamon ice cream.
