Rinse the jumbo soft shell crabs under cold water and gently pat them dry with paper towels.

In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and Old Bay seasoning until well combined.

In a large, heavy-bottomed skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

Dredge each soft shell crab in the batter, ensuring that it is fully coated. Allow any excess batter to drip off.
