Burger Preparation

    Prepare Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.

    Mash Black Beans

    In a large bowl, add the black beans and use a fork or potato masher to mash them until mostly smooth, leaving some chunks for texture.

    Mix Ingredients

    Add the cooked quinoa, oats, chopped bell pepper, chopped onion, minced garlic, soy sauce, olive oil, cumin, paprika, salt, and black pepper to the mashed black beans. Mix well until combined.

    Form Patties

    Add breadcrumbs to the mixture until it holds together well. Use your hands to shape the mixture into 4 equal-sized patties.

    Cook Patties

    Heat a non-stick skillet over medium heat and add a little olive oil to coat the bottom. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and heated through.

    Assemble Burgers

    Toast the whole grain burger buns if desired. Place a lettuce leaf on the bottom half of each bun, add the cooked patty, and top with a slice of tomato. Cover with the top half of the bun.

    Serve

    Serve the burgers warm with your favorite condiments on the side.
