Clams
Method
Preparation
Cleaning the Clams
Start by rinsing the fresh clams under cold running water to remove any sand or grit. Use a brush to scrub the shells if necessary.
Soaking the Clams
Place the rinsed clams in a bowl of cold water with sea salt. Let them soak for about 20 minutes to help them expel any sand.
Steaming the Clams
In a large pot, bring 4 cups of water to a boil. Add the soaked clams to the pot and cover with a lid. Steam the clams for about 5-7 minutes or until they open up. Discard any clams that do not open.
Preparing Garlic Butter
While the clams are steaming, melt 4 tablespoons of butter in a small saucepan over medium heat. Add minced garlic (3 cloves) and sauté until fragrant, about 1 minute. Remove from heat and stir in chopped parsley.
Serving
Once the clams are done steaming, transfer them to a serving bowl. Drizzle the garlic butter over the clams. Serve with lemon wedges and season with black pepper to taste.
