Fried Clam Strips
Method
Preparation and Cooking
- 1
Prepare the Clam Strips
Rinse the fresh clam strips under cold water to remove any sand or debris. Pat them dry with paper towels.
- 2
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornmeal, salt, black pepper, garlic powder, and paprika. Mix well until evenly combined.
- 3
Soak in Buttermilk
Pour the buttermilk into a separate bowl. Dip each clam strip into the buttermilk, allowing excess to drip off. Then, dredge the clam strips in the flour mixture, ensuring they are fully coated.
- 4
Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.
- 5
Fry the Clam Strips
Carefully add the coated clam strips to the hot oil in small batches, making sure not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy, turning them halfway through for even cooking.
- 6
Drain and Serve
Once cooked, remove the clam strips from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges on the side for squeezing over the clam strips.
