    Heat the olive oil in a large pot over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes.

    Add the chopped onion, bell pepper, and celery to the pot. Cook until the vegetables are softened, approximately 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Stir in the diced tomatoes, bay leaves, paprika, cayenne pepper, thyme, black pepper, and salt. Mix thoroughly to combine all the flavors.
