Method
Preparation
- 1
Marinate the Alligator Tail
Place the alligator tail meat in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 1 hour.
- 2
Prepare the Blackening Seasoning
In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. This will be used to season the alligator meat.
Cooking
- 3
Coat the Alligator Tail
After marinating, remove the alligator tail from the buttermilk and let any excess drip off. In a shallow dish, combine the all-purpose flour and cornmeal. Dredge the alligator tail in the flour-cornmeal mixture, ensuring it is well coated.
- 4
Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers. Test the oil temperature by dropping in a small amount of the flour mixture; it should sizzle immediately.
- 5
Fry the Alligator Tail
Carefully add the coated alligator tail to the hot oil. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
- 6
Serve
Serve the fried alligator tail hot, garnished with lemon wedges and your choice of dipping sauce.
