    Prepare the collard greens

    Rinse the collard greens under cold water to remove any dirt or grit. Remove the tough stems and cut the leaves into bite-sized pieces.

    Chop the garlic and onion

    Peel and finely chop the garlic cloves. Peel and chop the onion into small pieces.

    Cook the bacon

    In a large pot or Dutch oven, cook the smoked bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté the aromatics

    In the same pot with the bacon fat, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the chopped garlic and sauté for an additional 1-2 minutes until fragrant.

    Add collards and liquids

    Add the collard greens to the pot, stirring to combine with the onions and garlic. Pour in the chicken broth and apple cider vinegar. Stir well.

    Season the greens

    Sprinkle in the salt, black pepper, and red pepper flakes. Stir to evenly distribute the spices.

    Simmer the collards

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the collards are tender.

    Finish with bacon

    Crumble the cooked bacon and add it back to the pot. Stir to combine and let it heat through for an additional 5 minutes.
