1. Harvesting Grapes
Select ripe Sauvignon Blanc grapes, ideally late harvest, and rinse them gently under cold water. Remove any leaves or debris.
2. Crushing Grapes
Using a grape crusher or your hands, crush the grapes to release their juice into a fermentation vessel.
3. Adding Sugar
Dissolve the sugar in water and add it to the crushed grapes in the fermentation vessel, stirring well.
4. Pitching Yeast
Rehydrate the late harvest wine yeast according to the package instructions and add it to the fermentation vessel. Stir to combine.
5. Fermentation Setup
Seal the fermentation vessel with an airlock and place it in a cool, dark area. Allow fermentation to occur for about 2-3 weeks, or until bubbling has slowed significantly.
Aging and Bottling
6. Aging Wine
If desired, add oak chips to the wine for additional flavor and let it age for another 2-4 weeks. Stir occasionally.
7. Bottling Wine
Once the wine has aged to your liking, use bottling equipment to transfer the wine into clean, sterilized bottles. Seal the bottles with corks.
8. Labeling and Storing
Label the bottles with the date and type of wine. Store them upright in a cool, dark place for at least 6 months before tasting.
