Prep the Ingredients
Start by preparing all the ingredients. Clean the mussels under cold water, removing any beards. Drain the canned clams and set aside. Cut the fresh fish into bite-sized pieces and peel and devein the shrimp. Peel and dice the potatoes, dice the carrots, slice the okra, and slice the onions.

Roast Garlic
If you haven't done so already, roast the garlic by wrapping whole garlic bulbs in aluminum foil and baking them at 400°F (200°C) for about 30-40 minutes until soft. Squeeze out the roasted garlic and mash it with a fork.

Cook the Bacon
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Make the Chowder Base
Pour in the heavy cream and add the mashed roasted garlic. Stir well to combine and let simmer for an additional 5 minutes. Season with salt and pepper to taste.
Serving

Serve Chowder
Ladle the seafood chowder into bowls. Top with crispy bacon and serve with slices of grilled sourdough bread on the side.
