Preparation of Oysters

Cleaning the Oysters
Rinse the fresh oysters under cold running water. Use a stiff brush to scrub the shells thoroughly to remove any dirt or grit.

Shucking the Oysters
Place the oysters on a clean kitchen towel with the hinged side facing you. Hold the oyster securely with one hand and insert an oyster knife into the hinge. Twist the knife to open the shell, then slide the knife along the top shell to cut the muscle. Remove the top shell and carefully detach the oyster from the bottom shell, keeping the oyster and its juice intact.

Plating the Oysters
Arrange the freshly shucked oysters on a chilled platter or a bed of crushed ice to keep them cold.

Adding Garnishes
Place lemon wedges, a small bowl of cocktail sauce, and a bottle of hot sauce alongside the oysters. Sprinkle the minced fresh parsley over the oysters for an added touch of flavor and presentation.
