Crispy Anson Mills Grits

Smoked Bacon Collard Greens

Method

Crispy Anson Mills Grits

    Prepare the Grits

    In a pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt and slowly whisk in 1 cup of Anson Mills grits. Reduce heat to low and cook, stirring occasionally for about 20-25 minutes until thickened.

    Add Butter and Cornmeal

    Once grits are thick, stir in 2 tablespoons of butter and 1 cup of cornmeal. Cook for an additional 5 minutes, then spread the mixture onto a baking sheet to cool and set.

    Fry the Grits

    Once set, cut grits into squares. Heat oil in a frying pan and fry the squares until crispy and golden brown on both sides, about 3-4 minutes per side.

Smoked Bacon Collard Greens

    Cook the Bacon

    In a large pot, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    Sauté Onions and Garlic

    In the same pot, add diced onions and minced garlic to the bacon drippings. Sauté until onions are translucent.

    Cook the Greens

    Add chopped collard greens to the pot, followed by 2 cups of chicken broth. Simmer for about 30 minutes until greens are tender. Season with salt and pepper to taste.

    Finish with Bacon

    Stir in the cooked bacon just before serving.

Preserved Okra

    Prepare the Brine

    In a pot, combine 1 cup of vinegar, 1 cup of water, and 2 tablespoons of salt. Bring to a boil.

    Pack the Okra

    In a clean jar, pack sliced okra tightly. Pour the hot brine over the okra and add spices to taste.

    Preserve

    Seal the jar and allow to cool. Store in the refrigerator for at least 24 hours before using.

Pot Likker Butter

    Make the Butter

    In a small saucepan, melt 1 stick of butter. Slowly whisk in 1 cup of pot likker until combined. Keep warm until ready to serve.

Fried Catfish

    Prepare the Fish

    In a bowl, mix 1 cup of cornmeal, 1 cup of flour, salt, and pepper. Dredge catfish fillets in the mixture, coating evenly.

    Fry the Fish

    Heat oil in a deep frying pan. Fry the catfish fillets for 4-5 minutes per side until golden brown and cooked through.
