Prepare the Eggs

    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat.

    Cook the Eggs

    Once boiling, cover the saucepan and remove it from the heat. Let the eggs sit in the hot water for 12 minutes.

    Cool the Eggs

    Transfer the eggs to a bowl of ice water to cool for about 5 minutes. This will make peeling easier.

    Peel and Halve the Eggs

    Once cooled, gently tap the eggs on a hard surface to crack the shell. Peel the shells off and slice each egg in half lengthwise.

Prepare the Filling

    Make the Filling

    In a mixing bowl, combine the chopped lobster meat, mayonnaise, Dijon mustard, pickled mustard seeds, lemon juice, salt, and black pepper. Mix until well combined.

    Add Scallions

    Fold in the finely chopped scallions into the lobster mixture.

Assemble the Deviled Eggs

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the lobster filling.

    Garnish

    Sprinkle paprika over the filled eggs and top with extra pickled mustard seeds and sliced scallions for garnish.
