Gulf Shrimp Cacio E Pepe Recipe

Pasta Preparation

    Cook the Spaghettini

    Bring a large pot of salted water to a boil. Add the spaghettini and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Shrimp Preparation

    Sauté the Shrimp

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the Gulf shrimp and cook for 3-4 minutes until they turn pink and opaque. Season with salt and set aside.

Brown Butter Crumbs

    Prepare Brown Butter Crumbs

    In a small pan, melt the unsalted butter over medium heat. Add the bread crumbs and cook, stirring frequently, until the crumbs are golden brown and crispy, about 5-7 minutes. Remove from heat and set aside.

Combine Pasta and Sauce

    Create the Cacio e Pepe Sauce

    In the same pot used for the pasta, combine the drained spaghettini with the sautéed shrimp. Add the grated Grana Padano cheese, freshly cracked black pepper, and about 1/2 cup of reserved pasta water. Toss everything together until the cheese melts and forms a creamy sauce. Add more pasta water if needed to reach your desired consistency.

Serve

    Plate the Dish

    Divide the shrimp cacio e pepe among serving plates. Top with the brown butter crumbs and garnish with finely chopped chives. Serve immediately.
