Method

Cauliflower Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Cauliflower

Remove the leaves and stem from the cauliflower head. Cut it into florets.

  3. 3

    Season the Cauliflower

In a large bowl, combine cauliflower florets, gochujang, olive oil, garlic powder, salt, and black pepper. Toss until the cauliflower is evenly coated.

  4. 4

    Roast the Cauliflower

Spread the cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and slightly charred, flipping halfway through.

Peanut Kimchi Aioli Preparation

  1. 5

    Combine Ingredients

In a food processor, combine mayonnaise, kimchi, peanut butter, lime juice, garlic, and salt. Blend until smooth.

  2. 6

    Taste and Adjust

Taste the aioli and add more salt or lime juice as needed. Set aside.

Pickled Daikon Preparation

  1. 7

    Prepare the Daikon

Peel the daikon radish and slice it thinly into rounds or matchsticks.

  2. 8

    Make the Pickling Brine

In a bowl, mix rice vinegar, sugar, and salt until the sugar dissolves.

  3. 9

    Pickle the Daikon

Place the sliced daikon in a jar and pour the pickling brine over it. Seal the jar and let it sit at room temperature for at least 30 minutes before serving.
