Preparation of Calamari

    Prepare the Calamari

    In a large bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well to combine. Dredge the calamari rings in the flour mixture, ensuring they are well coated.

    Heat the Oil

    In a deep frying pan or a heavy-bottomed pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until the calamari turns golden brown. Use a slotted spoon to remove the calamari and transfer to a paper towel-lined plate to drain excess oil.

Preparation of Mango-Chile Mojo

    Combine Ingredients

    In a blender or food processor, combine the diced mango, lime juice, minced garlic, chopped cilantro, minced jalapeño, and olive oil. Blend until smooth.

    Taste the mojo and season with salt as needed. Set aside.

    In a small bowl, combine the mayonnaise, lime juice, minced garlic, lime zest, and salt. Whisk together until smooth and well combined.
