Method

Fish

  1. 1

    Prepare the Batter

In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper.

  2. 2

    Add the Beer

Slowly pour in the beer while continuing to whisk until the batter is smooth and free of lumps.

  3. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat the Cod

Dip each cod fillet into the batter, allowing the excess to drip off.

  5. 5

    Fry the Cod

Carefully place the battered cod into the hot oil and fry for 4-5 minutes or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

Crispy Slaw

  1. 6

    Combine Vegetables

In a large bowl, combine the shredded cabbage and grated carrot.

  2. 7

    Make the Dressing

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  3. 8

    Toss the Slaw

Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate for at least 30 minutes before serving.

French Fries

  1. 9

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips to create fries.

  2. 10

    Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

  3. 11

    Fry the Fries

Drain and dry the fries thoroughly. In a separate pot, heat the vegetable oil over medium-high heat. Fry the potatoes in batches for about 5-7 minutes until golden and crispy. Remove and drain on paper towels, then season with salt.

Serving

  1. 12

    Serve

Plate the battered cod alongside the crispy fries and slaw. Drizzle with malt vinegar to taste before enjoying.
