Prepare the Cod
Pat the Pacific cod fillets dry with paper towels. Season both sides with salt and black pepper.

Fry the Cod
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded cod fillets and fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Assemble the Sandwich
On each burger bun, layer a fried cod fillet, a lettuce leaf, and a slice of tomato. Top with pickled mustard seed remoulade.

Pickle the Cucumber
After 10 minutes, add rice vinegar and sugar to the cucumber. Toss to combine and let sit for an additional 5 minutes.

Mix the Remoulade
In a bowl, combine mayonnaise, Dijon mustard, pickled mustard seeds, lemon juice, salt, and black pepper. Stir until smooth.

Prepare the Potatoes
Peel and cut the russet potatoes into fries. Rinse them in cold water to remove excess starch, then pat dry.

Sprinkle salt on the hot fries to taste and serve alongside the fish sandwich.
