Method

Fish Sandwich

    Prepare the Cod

    Pat the Pacific cod fillets dry with paper towels. Season both sides with salt and black pepper.

    Set up Breading Station

    In one bowl, add the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine cornmeal, salt, and black pepper.

    Bread the Cod

    Dredge each fillet in flour, dip into the egg mixture, and then coat with the cornmeal mixture.

    Fry the Cod

    Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded cod fillets and fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Assemble the Sandwich

    On each burger bun, layer a fried cod fillet, a lettuce leaf, and a slice of tomato. Top with pickled mustard seed remoulade.

Salted Cucumber

    Prepare the Cucumber

    Slice the cucumber thinly and place in a bowl. Sprinkle salt over the slices and let sit for 10 minutes.

    Pickle the Cucumber

    After 10 minutes, add rice vinegar and sugar to the cucumber. Toss to combine and let sit for an additional 5 minutes.

Pickled Mustard Seed Remoulade

    Mix the Remoulade

    In a bowl, combine mayonnaise, Dijon mustard, pickled mustard seeds, lemon juice, salt, and black pepper. Stir until smooth.

Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into fries. Rinse them in cold water to remove excess starch, then pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    Sprinkle salt on the hot fries to taste and serve alongside the fish sandwich.
