Blackened Shrimp And Grits Recipe

Shrimp

    Season the Shrimp

    In a bowl, toss the peeled and deveined shrimp with Cajun seasoning until well coated.

    Cook the Shrimp

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are opaque and cooked through. Remove from heat and set aside.

Grits

    Prepare the Grits

    In a medium saucepan, bring the water and salt to a boil. Gradually stir in the Anson Mill grits, reduce the heat to low, and simmer for about 20-25 minutes, stirring occasionally.

    Finish the Grits

    Once the grits are cooked and creamy, stir in the butter and shredded cheddar cheese until fully melted and combined. Keep warm.

Collard Greens

    Cook the Bacon

    In a large pot, cook the chopped smoked bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Sauté the Aromatics

    In the same pot, add the diced onion and garlic to the bacon drippings. Sauté until the onion is translucent.

    Cook the Collard Greens

    Add the chopped collard greens and chicken broth to the pot. Season with salt and pepper to taste. Cover and simmer for about 30 minutes, until the greens are tender.

    Combine with Bacon

    Stir in the cooked bacon and simmer for an additional 5 minutes.

Okra Butter

    Make the Okra Butter

    In a small saucepan, melt the butter over low heat. Stir in the chopped preserved okra and cook for 2-3 minutes, allowing the flavors to meld.

Assembly

    Plate the Dish

    To serve, place a generous scoop of cheesy grits on a plate. Top with the blackened shrimp, sautéed collard greens, and drizzle the okra butter over the top. Enjoy!
