Prepare the Blackened Catfish

Prepare the Spice Mixture
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt.

Season the Catfish
Pat the catfish fillets dry with paper towels. Rub the spice mixture generously over both sides of each fillet.

Make the House Remoulade

Combine Ingredients
In a mixing bowl, combine mayonnaise, Dijon mustard, horseradish, lemon juice, chopped capers, chopped parsley, and minced garlic. Mix well.

Season the Remoulade
Add salt and black pepper to taste. Adjust seasoning as needed and refrigerate until ready to use.
Assemble the Sandwiches

Prepare the Buns
Toast the sandwich buns lightly on a grill or in a toaster.

Build the Sandwich
Spread a generous amount of the house remoulade on the bottom half of each toasted bun. Place a blackened catfish fillet on top, followed by pickles. Top with the other half of the bun.

Serve the assembled catfish sandwiches with a side of fries.
