    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Oysters

    Carefully shuck the oysters and place them on a baking sheet, ensuring they are stable and not tipping over.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it cool, then crumble it into small pieces.

    Sauté Shallots and Spinach

    In the same skillet, add the olive oil and sauté the chopped shallots until they are translucent, about 3-4 minutes. Add minced garlic and cook for another minute. Then add the spinach and cook until wilted. Season with salt and black pepper to taste.

    Combine the Topping

    In a mixing bowl, combine the crumbled bacon, sautéed spinach and shallots, bread crumbs, and fontina cheese. Mix well to ensure everything is evenly coated.

    Top the Oysters

    Spoon the topping mixture generously over each oyster.

    Bake

    Place the baking sheet with the topped oysters in the preheated oven. Bake for about 12-15 minutes or until the topping is golden brown and the cheese has melted.
