Preparing Sushi Rice

Rinse the Rice
Begin by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve a better texture.

Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, gently fold in the vinegar mixture with a spatula to season the rice. Allow to cool to room temperature.

Prepare Ahi Tuna
Cut sashimi-grade ahi tuna into bite-sized cubes and set aside in the refrigerator to keep it fresh.

Slice the Avocado
Cut the avocado in half, remove the pit, and slice it into thin wedges. Set aside.

Prepare Salty Cucumber
Thinly slice the cucumber and sprinkle with salt. Let it sit for about 10 minutes to release moisture, then drain and pat dry.

Slice Serrano Pepper
Remove the stem from the serrano pepper and slice it thinly. Remove seeds for less heat if desired.

Combine Sauce Ingredients
In a small bowl, whisk together soy sauce, ponzu sauce, grated ginger, and lime juice until well combined. Adjust seasoning to taste.

Build Your Bowl
In a serving bowl, start with a base of sushi rice. Top with cubes of ahi tuna, avocado wedges, and salty cucumber slices. Garnish with sliced serrano pepper and a sprinkle of sesame seeds.

Finally, drizzle the ginger ponzu sauce over the top of the poke bowl. Serve immediately and enjoy!
