Prepare Sushi Rice

    Rinse the Sushi Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare Poke Ingredients

    Dice the Ahi Tuna

    Cut the sushi-grade ahi tuna into 1/2-inch cubes and place in a bowl.

    Prepare the Avocado and Cucumber

    Slice the avocado in half, remove the pit, and scoop out the flesh. Dice it into cubes. Slice the cucumber thinly.

    Mix the Poke Ingredients

    In the bowl with the diced tuna, add soy sauce, sesame oil, diced avocado, and cucumber. Toss gently to combine.

    Garnish with Green Onions

    Chop the green onions and sprinkle them over the poke mixture.

Prepare Ginger Ponzu Sauce

    Mix the Ponzu Sauce

    In a small bowl, combine soy sauce, yuzu juice, mirin, grated fresh ginger, and sesame seeds. Stir until well blended.
