Ancient Grain Buns

Mix the Dough
In a large bowl, combine whole wheat flour, quinoa flakes, and salt. In a separate bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy. Add honey and olive oil to the yeast mixture.

Combine Ingredients
Pour the yeast mixture into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape and Second Rise
Punch down the dough, shape it into buns, and place them on a baking sheet lined with parchment paper. Cover with a cloth and let them rise for another 30 minutes.

Bake
Preheat the oven to 375°F (190°C). Bake the buns for 20-25 minutes or until golden brown. Let cool before serving.

Prepare the Dough
In a mixing bowl, combine all-purpose flour, sugar, salt, and active dry yeast. In a separate bowl, warm the milk and gradually add it to the dry ingredients. Mix until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 5 minutes until it becomes smooth. Form it into a ball and place it in a greased bowl. Cover and let it rise in a warm place for about 1 hour.

Prepare the Butter Layer
While the dough is rising, flatten the unsalted butter between two sheets of parchment paper into a rectangle. Chill in the refrigerator until firm.

Final Rise
After the final fold, wrap the dough in plastic wrap and refrigerate for at least 4 hours or overnight.

Shape Croissants
Roll out the dough into a large rectangle. Cut it into triangles and roll each triangle from the base to the tip to form croissants. Place them on a baking sheet and let them rise for about 30 minutes.

Bake
Preheat the oven to 400°F (200°C). Brush the croissants with the beaten egg and bake for 15-20 minutes or until golden brown. Let cool before serving.
