Method

Preparation

  1. 1

    Prepare the Ingredients

Begin by gathering all the ingredients. Slice the corned beef or pastrami if not already sliced. Drain the sauerkraut to remove excess moisture.

Assembly

  1. 2

    Assemble the Sandwich

Take two slices of marbled rye bread. On one slice, layer 2 slices of Swiss cheese, followed by half of the corned beef or pastrami. Add 1/2 cup of sauerkraut and drizzle 2 tablespoons of 1000 Island dressing over the sauerkraut. Top with another slice of Swiss cheese and cover with another slice of marbled rye bread.

  2. 3

    Repeat for Second Sandwich

Repeat the assembly process for the second sandwich using the remaining ingredients.

Cooking

  1. 4

    Grill the Sandwiches

Preheat a skillet or griddle over medium heat. Place the assembled sandwiches on the skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted. You can press down gently on the sandwiches with a spatula for even grilling.

Serving

  1. 5

    Serve

Once grilled, remove the sandwiches from the skillet. Cut them in half and serve hot with additional 1000 Island dressing on the side if desired.
