Preparation

1. Prepare the Ingredients

Dice the onion, bell pepper, and mince the garlic. Drain and rinse the kidney and black beans.

2. Cook the Ground Beef

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break it apart with a spoon as it cooks.

3. Sauté Vegetables

Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for another 5 minutes, until the vegetables are softened.

4. Add Tomatoes and Beans

Stir in the canned diced tomatoes, kidney beans, and black beans. Mix well to combine.

5. Season the Chili

Add the chili powder, cumin, oregano, salt, black pepper, and cayenne pepper (if using). Stir to combine all the spices evenly.

6. Add Broth and Simmer

Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 30 minutes, stirring occasionally.

Serving

7. Serve the Chili

Ladle the chili into bowls or cups. Optionally, top with sour cream, shredded cheese, and chopped green onions.
