Method

Prepare the Pesto Aioli

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, pesto sauce, lemon juice, and minced garlic until well combined.

    Season

    Add salt and black pepper to taste, adjusting the seasoning as necessary. Set aside.

Assemble the Panini

    Layer Ingredients

    On one slice of sourdough bread, spread a generous amount of the prepared pesto aioli. Layer with sliced grilled chicken, provolone cheese, fresh spinach, and sliced tomato.

    Top with Bread

    Place the second slice of sourdough bread on top of the layered ingredients.

Grill the Panini

    Preheat Grill

    Preheat a panini press or a skillet over medium heat.

    Toast the Panini

    If using a skillet, drizzle a little olive oil on the skillet surface. Place the assembled panini in the press or skillet. If using a skillet, press down with a spatula. Grill for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.

Serve

    Slice and Enjoy

    Remove the panini from the grill, let it cool for a minute, then slice in half and serve warm.
