Preparation

Marinating the Chicken

1. Prepare the Marinade

In a bowl, combine olive oil, lime juice, cumin, paprika, salt, black pepper, and garlic powder to create the marinade.

2. Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Chicken

3. Preheat the Grill

Preheat your grill or grill pan to medium-high heat.

4. Cook the Chicken

Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). In the last minute of cooking, place a slice of pepper jack cheese on each chicken breast to melt.

Assembling the Sandwich

5. Prepare the Buns

Lightly toast the whole wheat sandwich buns on the grill or in a toaster until golden brown.

6. Build the Sandwich

Spread mayonnaise and hot sauce on the bottom half of each toasted bun. Place a grilled chicken breast with melted cheese on top, followed by lettuce, tomato slices, red onion, jalapeño (if using), avocado slices, and chopped cilantro. Top with the other half of the bun.
