Wrap Preparation

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced bell pepper and red onion, sautéing until softened, about 5 minutes.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet with the cooked vegetables and scramble until fully cooked, about 5-7 minutes.

    Add Artichokes and Cheese

    Stir in the chopped artichoke hearts and shredded Asiago cheese until melted and combined with the egg mixture.

    Assemble the Wraps

    Lay out the flour tortillas. Divide the egg mixture evenly among the tortillas, adding the cooked breakfast sausage or bacon if desired. Roll each tortilla tightly to form wraps.

Salsa Preparation

    In a medium bowl, combine diced tomatoes, finely chopped red onion, fresh cilantro, lime juice, and salt. If using, add finely chopped jalapeño for added spice.
