Cooking the Quinoa

Rinse Quinoa
Rinse 1 cup of quinoa under cold water to remove any bitterness.

Combine Quinoa and Broth
In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat.

Simmer Quinoa
Once boiling, reduce heat to low, cover, and let simmer for about 15 minutes, or until the quinoa has absorbed all the liquid.

Fluff Quinoa
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Preparing the Vegetables

Prepare Black Beans
Drain and rinse the black beans. Set aside.

Mix Vegetables
In a medium bowl, combine the corn kernels, drained black beans, diced red bell pepper, diced red onion, halved cherry tomatoes, and chopped cilantro.

Prepare Avocado
Dice the avocado just before serving to prevent browning.
Seasoning the Dish

Season Vegetables
Add cumin, chili powder, garlic powder, salt, and black pepper to the vegetable mixture. Stir well to combine.

Add Lime Juice
Squeeze the juice of 1 lime over the mixture and stir again.
Making the Dressing

Prepare Dressing
In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
Combining the Dish

Combine Quinoa and Vegetables
In a large bowl, combine the quinoa and the vegetable mixture. Drizzle with the dressing and toss gently to combine.

Top with diced avocado just before serving.
